Danville Mexican restaurant plans to become Italian eatery

A well-known Mexican restaurant in Danville is doing more than changing its menu; it’s changing its entire cuisine.

“Sometimes you have to make a big decision to try something new if it means growing your business,” said Victor Viveros, manager of Guadalajara Mexican Restaurant.

The business, at 917 Hustonville Road, will become an Italian restaurant before the end of summer. Viveros said he looked around Danville, noticed the lack of “homey” Italian dining options, and decided to act upon it.

“We are going to change because there are a lot of Mexican restaurants here: three Guadalajara’s, two other restaurants, and a Mexican store,” he said. “I feel like we’re doing fine but we’re not growing.”

Italian food won’t be totally new for Viveros or his head cook.

“Our cook here at Guadalajara worked previously for 12-13 years at an Italian restaurant and I have also worked for an Italian restaurant before,” he said. “I believe we have a really good chance here to better our business.”
